Glengoyne Cuartillo is a fine Highland Single Malt Whisky with sweet fruitiness and a bright gold hue.
Named after the rural neighbourhood (or pagos) in Jerez, Spain, this sherry-heavy Glengoyne has hand-selected first fill American Oak oloroso sherry casks at its core. Normally exclusive to duty free. Big one litre format. The producers say to expect aromas and flavours of green apples, toffee, vanilla and cinnamon.
Tasting note: Bright gold. Soft, sedate aromas giveaway the low ABV. Subtle sherry notes suggest orange zest, candied plums, new leather, bitter chocolate and delicate spice. Manages a little more concentration in a well-rounded, gently spoken delivery, the sherry brushed on with the softest strokes imaginable. Feather weight, amiable and easy going, if a little fleeting. 40% Alc./Vol.

History
Situated in a wooded valley in the Highlands region of Scotland, Glengoyne Distillery was founded by George Campbell and has been producing single malt whisky continuously since 1833. The distillery, which takes its name from “Glen Guin” or Glen of the Wild Geese, is situated directly atop the Highlands Line — the line that divides the Highlands and Lowlands regions of Scotland. As a result, while Glengoyne Single Malt Scotch Whisky is distilled in the Highlands region, it is matured in the Lowlands region, despite the fact that the distillery’s stillhouse and maturation warehouses are across the street from each other.
Glengoyne Single Malt Whisky is produced exclusively from Golden Promise barley. Golden Promise is an early-maturing spring barley that has a depth of flavor ideal for single malts. While it was popular in the production of whisky for many years, it gave way to cheaper barely that was higher in yield but lower in quality. Today, Glengoyne, along with The Macallan, is one of only two distilleries remaining in Scotland that continues to use Golden Promise barley.
Once the Golden Promise barley has been air-dried, it is milled and mashed before being fermented for 56 hours in washbacks crafted from pine. Following fermentation, the wash is distilled through Glengoyne’s copper-pot wash still and then again through its two copper-pot spirit stills, working in tandem (whisky is distilled more slowly at Glengoyne than at any other distillery in Scotland). The copper stills remove any remaining sulphur in the wash, and produce the sweet, concentrated flavors that define Glengoyne Scotch Whisky.
Following distillation, Glengoyne 21 Year Old Single Malt Scotch Whisky is matured for 21 years in sherry casks crafted from Spanish oak. The process for selecting and coppering these casks takes six years: oak trees are selected and felled in the North of Spain and the wood from these trees is cut into staves. After the staves have dried for three years, the casks are coopered at Tevasa Cooperage in Spain, filled with Oloroso sherry for approximately 28 months and then emptied before being shipped to Glengoyne.
As a result of these incredible and carefully selected casks, the whisky has an aroma of Christmas cake, honey and red fruits that gives way to notes of plums, berries and creamy vanilla on the palate. The finish is lush, elegant and full, with touches of sherry and red fruit underlying hints of cloves and spices.
Glengoyne 21 Year Old Single Malt Scotch Whisky earned the Gold Medal at the San Francisco World Spirits Competition and the International Wine and Spirits Competition.
